Before You Begin

A few simple preparations will help you achieve the richest flavor, smoothest texture, and most enjoyable cooking experience.

Begin the Ritual

Arrange the contents of your kit before beginning for a smoother cooking experience.

Create the Soup Base

Wash and season your preferred protein before cooking to build a richer soup foundation.

Build the Heart of the Soup

Cook the protein of your choice until tender. Then add the desired ingredients layer by layer. Simmer at medium to low heat until fully cooked. Season to taste. 

Prepare the Final Pairing

Keep the garri set aside until the soup is nearly complete. Preparing the eba fresh at the end creates the soft, smooth texture traditionally served alongside rich Egusi soup.

A Note Before You Cook

Each ingredient within your FUFU To Go™ kit is individually packaged to allow complete flexibility while cooking. Adjust quantities, spice levels, seasoning intensity, and ingredient combinations according to your personal taste, dietary preferences, or household needs.

For a lighter flavor profile, use smaller portions of habanero, crayfish, or dawadawa.

For richer depth and traditional intensity, use the full portions provided.

The Cooking Ritual

Follow each step slowly and intentionally as the flavors deepen, the soup thickens, and the ritual comes together.

Cook the Protein

Place your washed protein into a pot and add enough water to cover. Season lightly with sea salt and cook over medium heat until tender and flavorful. The broth created during this stage becomes the foundation of the soup’s depth and richness.

Approximate Time: 15–25 minutes depending on protein choice.

Build the Aromatic Base

Once the protein is nearly cooked, stir in the palm oil and allow it to melt fully into the broth. Add the dawadawa, ground crayfish, and habanero, allowing the flavors to bloom gently into the soup base. Season to taste.

Approximate Time: 3–5 minutes.

Add the Ground Egusi

Gradually stir the ground egusi into the pot while mixing continuously to prevent clumping. Allow the soup to simmer gently as the egusi thickens and develops its signature rich texture.

Approximate Time: 8–15 minutes.

Adjust the Soup Consistency

Add warm water gradually if the soup becomes too thick. Stir gently and allow the ingredients to continue simmering until the texture becomes smooth, rich, and balanced.

Approximate Time: 3–5 minutes.

Add the Dried Ugu

Stir in the rinsed dried Ugu leaves or any vegetable of your choice toward the final stage of cooking. Allow the leaves to soften naturally while preserving their vibrant earthy flavor and traditional character.

Approximate Time: 2–5 minutes.

Prepare the Fufu

Bring water to a gentle boil in a separate pot. Gradually pour in the garri while stirring continuously until a smooth, soft dough forms. Adjust texture with additional water or garri as needed.

Serve the Ritual

Spoon the Egusi soup into a deep serving bowl and pair with warm freshly prepared eba. Serve immediately and enjoy the richness, warmth, and heritage of the complete culinary ritual.
