Premium Norwegian Okporoko is traditionally preserved through the centuries-old Norwegian practice of drying fish naturally in cold Arctic air. This patient process removes moisture while concentrating the fish’s unmistakable maritime character and developing its firm, enduring texture.
Although preserved along the northern Norwegian coast, okporoko has become deeply woven into West African culinary traditions. It brings remarkable depth, satisfying texture, and a distinctive savory character to heritage soups, broths, and slow-simmered stews.
The Maison offers two carefully selected preparations, allowing each cook to choose the expression best suited to the pot.
NORWEGIAN STOCKFISH STEAKS

Inspect the Premium Norwegian Okporoko carefully before preparation. Rinse thoroughly, then soak in clean, cool water until adequately rehydrated, changing the water periodically as needed.
Stockfish Heads generally require more cleaning and a longer rehydration period than the steaks. Once softened, clean each piece thoroughly and remove any unwanted fragments before cooking.
Add the prepared okporoko to seasoned stock, soup, or stew and cook thoroughly until tender. Introduce it earlier for deeper infusion or later when a firmer, more pronounced texture is preferred.
