Ingredients

  • 1 cup CaMasi Maison™ Premium Ground Ewedu
  • 3 cups water, plus more as needed
  • 1 tablespoon iru or dawadawa, rinsed
  • ¼ teaspoon food-grade potash, optional
  • 1 teaspoon premium sea salt, adjusted to taste
THE MAISON METHOD

Preparation Method

  1. Prepare the potash solution: If using potash, dissolve it in 2 tablespoons of warm water. Allow any sediment to settle, then carefully pour the clear liquid into a separate bowl.
  2. Heat the water: Pour 3 cups of water into a medium saucepan and bring it to a gentle boil over medium heat.
  3. Add the potash: Stir in ½ teaspoon of the clarified potash solution. Use only a small amount, as too much can affect the flavor and texture of the soup.
  4. Add the ground ewedu: Reduce the heat to medium-low. Sprinkle the ground ewedu into the water gradually while whisking continuously to prevent lumps.
  5. Develop the texture: Cook for 3–5 minutes, whisking or stirring briskly with an ijabe or wooden spoon, until the soup becomes smooth, green and pleasantly viscous.
  6. Add the iru: Stir in the rinsed iru and simmer gently for another 3 minutes so its savory character infuses the soup.
  7. Adjust the consistency: Add a little warm water if the soup is thicker than desired. Stir until the characteristic silky draw is restored.
  8. Season and finish: Add the sea salt and taste carefully. Simmer for 1–2 minutes, then remove from the heat while the color remains vibrant.

A NOTE FROM THE MAISON

Maison Notes

Add the ground ewedu gradually while whisking continuously. This produces a smooth soup without dry pockets or lumps.
Use only food-grade potash intended for cooking, and add it sparingly. The recipe may also be prepared without potash, although the color and draw may differ slightly.
Do not overcook the ewedu. A brief simmer preserves its green color, delicate flavor and characteristic texture.
Serve with amala and gbegiri, accompanied by obe ata or your preferred Nigerian stew.
