Ingredients

  • 3 pounds cow foot, cleaned and cut into bite-sized pieces
  • 1 medium onion, divided
  • 2 teaspoons premium sea salt, divided and adjusted to taste
  • 2 seasoning cubes, optional
  • 5 cups water, plus more as needed
  • ¾ cup natural red palm oil
  • 1 teaspoon food-grade potash, also called akanwu or kaun
  • ¼ cup warm water for dissolving the potash
  • ¼ cup ground crayfish
  • 1 teaspoon ground ehuru
  • 1–2 habanero peppers, finely blended or adjusted to taste
  • 1 teaspoon ground Cameroon pepper
  • 1 small red onion, thinly sliced into rings
  • ¼ cup finely sliced utazi leaves
THE MAISON METHOD

Preparation Method

  1. Clean the cow foot: Rinse the cow-foot pieces thoroughly under cool running water, checking carefully for any remaining bone fragments.
  2. Begin the cooking: Place the cow foot in a large, heavy-bottomed pot. Add half of the chopped onion, 1 teaspoon of sea salt, the optional seasoning cubes and enough water to cover the pieces.
  3. Cook until tender: Cover and simmer over medium-low heat for 2–2½ hours, or until the cow foot is exceptionally tender and easily pierced with a fork. Add more hot water when necessary to prevent the pot from drying out.
  4. Reduce the stock: When the cow foot is tender, uncover the pot and allow the remaining liquid to reduce until approximately ½ cup of concentrated stock remains. Remove the cow foot and reserve the stock separately.
  5. Prepare the potash solution: Dissolve the food-grade potash in ¼ cup of warm water. Allow any sediment to settle, then carefully pour the clear liquid into a separate bowl, leaving the sediment behind.
  6. Emulsify the palm oil: Pour the palm oil into a clean pot or large heat-safe bowl. Add the clear potash solution gradually, one teaspoon at a time, stirring continuously until the oil thickens and changes from deep red to a creamy orange sauce. Stop adding the solution once the desired consistency is reached.
  7. Season the sauce: Stir the ground crayfish, ground ehuru, blended habanero and Cameroon pepper into the emulsified palm-oil sauce.
  8. Adjust the consistency: Add the reserved cow-foot stock gradually, stirring until the sauce is smooth, glossy and thick enough to coat the meat without becoming watery.
  9. Combine the Nkwobi: Add the cooked cow-foot pieces and fold gently until every piece is evenly coated in the seasoned sauce.
  10. Warm gently: Place the pot over very low heat and warm for 3–5 minutes, stirring gently. Do not allow the sauce to boil vigorously, as excessive heat may cause it to separate.
  11. Finish and serve: Taste and adjust the salt and pepper. Transfer the Nkwobi to a serving dish and finish with the thinly sliced red onion and utazi leaves.

A NOTE FROM THE MAISON

Maison Notes

Use only food-grade potash intended for cooking. Add the clarified solution very gradually—the palm oil may require only a small amount to emulsify properly.
The cow foot should be exceptionally tender before it is added to the sauce. A pressure cooker may be used to shorten the cooking time.
Nkwobi is traditionally served warm as a shared delicacy and pairs beautifully with chilled palm wine or a favorite refreshing drink.
